If I’m feeling pretty organized, I will make a few entrees and snacks over the weekend so that I don’t have to buy lunch. Today, I’m feeling pretty organized. So, I decided to make Lemony Chicken and Rice Soup.
2 cups of Chicken thighs (that was in the freezer-thawed out!)
2 cloves of garlic (chopped)
1 1/2 tsp of Vegetable Better than Boullion
1 Leek (chopped)
1/4 cup of Red Onion (it was left over)
3/4 cup of Rice
1 cup of frozen peas
1 lemon
water
1.) warm the pot (should be deep enough to cook soup in)
2.) 2 tbs of oil (your choice) cook the garlic, onion, and leek
3.) throw in the chicken
4.) season with salt and pepper to taste
5.) cook until chicken is almost cooked through
6.) add the Better than Boullion
7.) Add about 2 1/2 cups of water
8.) Let the water come to a slow boil
9.) add the rice
10.) Continue to stir
*when the rice seems almost cooked through
11.) add the peas
12.) Cook for 3-5 minutes
13.) Add the juice of one whole lemon and a few slices
14.) About a tsp of Rosemary (if you have it)
15.) I had some dried thai chilies that I also added to it. I prefer a bit of a kick to my food
16.) A little more fresh pepper
17.) Yum!
